How To Cook Italian Style Pizza On a Weber BBQ

INGREDIENTS:

DOUGH: 7g dry yeast, 370ml lukewarm water, 10g caster sugar, 50ml olive oil, 10g salt, 600g strong white flour 300g tomato passata, 400g mozzarella cheese, 1 bunch basil, 40g dried oregano, salt and pepper to taste

IN THE KITCHEN:

1 In a medium mixing bowl, add the lukewarm water to the yeast and lightly mix until creamy.
2 Stir in the sugar, olive oil and salt and then mix.
3 Slowly add the flour a little at a time and mix.
4 Knead the mixture thoroughly for about 10 minutes.
5 Cover with cling film, and allow the dough to rise for approx. 1 hour in a warm place.
6 Once the dough had risen, divide it into four-five portions and roll into balls.
7 Then roll each individual ball out, on the floured surface, into a circular shape for the bases of the pizzas.
8 Spread tomato sauce evenly onto the pizza base followed by a good sprinkling of the oregano.
9 Tear the mozzarella into small, equal size pieces and arrange on top of the tomato sauce.
10 Season to taste with salt and pepper.
11 Sprinkle the pizza paddle with a little flour and scoop up one of the pizzas on it.

AT THE BARBECUE:

1 Prepare the barbecue for indirect heat, to approximately 260 °C.
2 Preheat the pizza stone on the centre of the cooking grate for about 10 minutes.
3 Place the first pizza on the stone.
4 Bake the pizza, with the lid on, for about 4-5 minutes or until the base is crisp.
5 Remove the pizza with the pizza paddle, and scatter fresh basil on top and serve.
