Hazel Tree Inoculated with Summer Truffle - Tuber aestivum / uncinatum

Availability: In Stock

Description

Truffles are underground mushrooms and are considered to be the ultimate gastronomic experience.

The Hazels are grown in a sterile environment to avoid cross contamination from competing fungi, and their roots are impregnated with truffle spores. The varieties chosen are both indigenous to Ireland & UK, are found naturally here.

Truffle prices reached record prices in 2003 despite an increase in yields, due to the increase in demand and despite the efforts of over 100,000 registered truffle hunters in Italy alone!!

Black Summer Truffle Scorzone (Tuber Aestivum Vittad.) - The easiest of all truffles for artificial cultivation and Scorzone truffles with eggs are famous. You can freeze them, grate the truffle into parmesan cheese or into olive oil, and it is excellent with meats, pasta, potatoes or sauces. Walnut to orange sized truffles. A very good low/mid priced truffle (@30p per gram fresh). Harvest June-September.

Truffles require three main conditions - 1) soil that is not compacted (like a lawned area for example) - an unused part of the garden would be ideal 2) soil that has a PH between 6.5-8.5 (not acid soil) and 3) well drained soil.

The plants are about 50cms tall, will last 50-70 years and need little maintenance, growing very quickly at first. They can grow to 7m tall if left, but can be trimmed into 2m hedges. Plant either in full sun or shade. They will lose their green leaves in the winter when dormant and thrive in Ireland. A typical plant should produce @50g of truffles per year on average after 4-6 years, and 80-100g after 12.

Truffles are taken very seriously by our supplier who specializes in truffle trees, and our plants are tested and certified, before being allowed for sale, to ensure quality and successful inoculation. Our suppliers are also the advisors to the main truffle farms that have been established in the UK, so you are with the experts !!

Truffles can spread, although slowly, and don't harm other plants or trees. Make a hole large enough to take the plant, add some grit and remove any roots in the soil which may carry competitive funghi species. Water in. No special care needed other than to water for the first year during dry spells - in fact, it's best to leave well alone and let the roots develop. Don't feed the trees or add manure, never use fungicides and avoid tap water containing chlorine. To harvest, carefully dig around the fibrous outer roots with fingers and a stick, from just under the surface 0-35cms down, taking care not to damage the plant. Brush the truffles and refrigerate for up to 14 days, washing only prior to eating. Once washed, it must be used up, preserved in oil or better still, frozen, or it will rot quickly. Just think of the price of just one truffle, or even compare a truffle tree against the price of a bay tree, and the status attached to such a plant and it's fruits! It is actually not uncommon for a house to increase in value which has a truffle orchard or 'tartufaio' !! Please contact us for information and bulk pricing for truffle farming. We hope your truffle tree is a talking point and produces delicious truffles for decades to come.
